Recipe: Raspberry Pretzel Jello Salad
Today I am sharing my mom’s delicious recipe for Raspberry Pretzel Jello Salad. The combination of the fruity raspberry with the salty pretzel makes for one amazing dessert! This is something my mom makes every Thanksgiving and Easter and it is always the highlight of everyone’s meal. I recently took a chance at making it myself and decided that you don’t need a special occasion to make this awesome dessert salad!
There are three different layers in this salad: pretzel layer, the filling, and the jello. I will split the ingredients and directions for each of these three layers separately so it’s easier to understand.
Ingredients for the pretzel layer-
1 and 3/4 cup crushed pretzels
3 tbs of sugar
1/2 cup melted butter
Ingredients for the filling-
8 oz Cool Whip
8 oz cream cheese
1 cup sugar
Ingredients for the jello-
6 oz package of raspberry Jello
12 oz bag of frozen raspberries
2 and a half cups of boiling water
Directions-
Start by crushing all of your pretzels in a big mixing bowl.
Pour in your melted butter.
Add the sugar.
Stir everything together until it is well mixed.
Put the pretzel bottom layer in a pan. I used a 13x9x2 size baking pan. Make sure everything is spread evenly across the bottom.
Bake in a 375 degree oven for 15 minutes.
While the pretzel layer is in the oven, you can start working on making the filling. All you need to do is mix the sugar, cream cheese, and completely thawed Cool Whip in a bowl. Make sure that you let your Cool Whip thaw all the way in the fridge before you use it.
Once the pretzel bottom is done, add the filling on top.
Completely cover the pretzel layer with the delicious filling.
Next make the Jello. Add your raspberry jello packet to the boiling water. Stir for 2-3 minute and the Jello is completely dissolved in the water.
Stir in your bag of frozen raspberries.
Let the raspberries soak in the hot water and jello until they are melty.
Once the jello is FIRM but NOT all the way set, pour it on top of the other two layers. Store it in the fridge until the jello is completely set.
Boom, you’re done! Take it out of the fridge, and cut yourself a piece to enjoy!
This stuff is delicious and I promise your kids are going to love it just as much as you are!
