Chocolate Chip Chocolate Cheesecake Bars
It was Mother’s Day this past weekend and I was baking again. I wanted to mix it up and do a little cheesecake to celebrate such a big day – celebrating moms and all! I have seen Chocolate Chip Cheesecake Bars before but it wasn’t enough to make it exactly according to the recipe. I wanted to make it my way. Plus, my husband only likes chocolate cheesecake and doesn’t care for plain cheesecake. And a graham cracker crust? Kind of boring.
I added chocolate to the cheesecake and turned the crust into Oreo crust and now we have something special! These are sinfully delicious. Oreo cookie crust topped with chocolate cheesecake topped with chocolate chip cookie. Seriously, so yummy! Plus, these bars would be perfect for a summer party, birthday get together, Father’s Day (it would be a BIG hit!) or 4th of July! So, “pin” this recipe and save it for that perfect baking opportunity! You won’t be sorry!
Ingredients:
Crust:
- 1 1/2 cups Oreo cookie crumbs
- 5 tablespoons unsalted butter, melted
Chocolate Chip Cookie Dough:
- 5 tablespoons unsalted butter, room temperature
- 1/3 cup packed light brown sugar
- 3 tablespoons granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon pure vanilla extract
- 3/4 cup flour
- 2/3 cup chocolate chips
Cheesecake Filling:
- 10 oz cream cheese, room temperature
- 1/4 cup sugar
- 1 large egg, room temperature
- 1 teaspoon pure vanilla extract
- 1/2 cup melted chocolate (I used Nestle semi-sweet chocolate chips melted)
Preparation:
1. Preheat the oven to 325 F. Grease an 8 inch square baking pan OR line the pan with parchment paper or foil allowing a little overhang and spray with nonstick cooking spray for an easier clean up. Set aside.
2. Mix the melted butter and Oreo crumbs until thoroughly combined. Press the mixture into the bottom of the prepared pan. Bake in preheated oven for 6 minutes. Remove pan to a cooling rack.
3. While the crust is cooling, prepare the chocolate chip cookie dough. In a large bowl with an electric mixer (or use a stand mixer), beat butter, brown sugar, granulated sugar, salt and vanilla until smooth and thoroughly combined, about 1 minute. Mix in the flour on low speed, and mix until just incorporated. Mix in the chocolate chips. Set aside.
4. In the bowl of a stand mixer or in a large bowl cream together the cream cheese and sugar until smooth. Mix in the egg and vanilla on low speed just until combined. Add the 1/2 cup melted chocolate (that has been cooled slightly) and mix just until combined again. Pour the cheesecake batter into the prepared crust.
5. Flatten the clumps of dough in your palms to flatten them out a bit. Distribute the cookie dough onto the top of the cheesecake batter. Be sure to use all of the dough. You will cover most of the cheesecake batter.
5. Bake for about 30-32 minutes, until the top feels dry and firm (the cookie dough) and the entire pan looks set. Move bars to a cooling rack and allow to cool completely. After 30 minutes, I popped mine in the refrigerator.
6. Slice into desired size and store in the refrigerator. I serve these bars cold.

These look delicious and decadent!
Can I double this recipe & put it in a cake pan instead? Will the oven temp change?
Is there an ingredient missing in the cookie dough? My “dough” is powder. Should I add an egg?
Nope. The cookie dough layer isn’t supposed to have an egg with this recipe. Maybe try softening or melting the butter next time to get it all mixed together? The butter should be all it needs to keep it from being just powder. 🙂
My cookie dough is more of a powder too, next time I’ll try melting part of it. Besides the semi powdery top, they came out delicious! Thanks for the recipe!
my cookie dough also came out like a powder, gona try adding a little extra melted butter. What did you do for the oreo crust? did you take out the cream from between the cookies and just use the cookies? how did you get them into such tiny crumbs?
These were absolutely delicious! I too thought at first that there was a typo and the egg was missing from the cookie dough portion…glad I looked at the comments. Used the exact amount of butter, made sure it was super soft and the dough held together just fine. Will definitely make these again. Cant wait to try the other cookie recipes posted here. Thanks Hollie!
i ended up putting an egg in the cookie dough and it still turned out fine – i’m making it again today so i’ll try melting the butter 🙂
My cookie dough was powder as well. I ended up mixing it together with my hands and it worked! My powder dough turned into the dough it’s supposed to be.
this is AMAZING!!!!!!!
