Raspberry Magic Bars
We headed to my family’s house for Memorial Day this past weekend. Like I’ve said before, I have a large family which means plenty of people to eat my yummy desserts. I couldn’t help myself but to make a few desserts to share. Since I’ve been on a huge peanut butter kick lately, I decided to mix it up and try something different.
I decided these Raspberry Magic Bars would be perfect! I’ve never made these bars before but they looked delicious and super easy. I was able to whip them up and throw them in the oven in the time it took everyone to put their swimsuits on and head out to the pool. Yes, that easy! I had these babies in the oven within 10 minutes.
I’m so glad I made them too because they were delicious! With the coconut, walnuts and raspberry combination they were more appreciated among the adults than the kids but that’s okay because we had plenty of other goodies for the little ones.
Ingredients:
1/2 cup (1 stick) butter – melted
1 1/2 cups graham cracker crumbs
1 can (14 oz.) Sweetened Condensed Milk
2 cups (12-oz. pkg.) Semi-Sweet Chocolate Chips
1 cup flaked coconut
1 cup chopped pecans (or walnuts!)
1/2 cup seedless red raspberry jam
Preparation:
1) Preheat oven to 350° F.
2) Combine graham cracker crumbs and melted butter. Stir until completely combined. Press onto the bottom of a greased 13 x 9 inch baking pan.
3) Pour sweetened condensed milk evenly over crust. Sprinkle with morsels, coconut and nuts. You can use pecans or walnuts. The original recipe calls for walnuts but I used pecans and it worked out great. Press the mixture down with your hands.
4) Microwave jam in small, microwave-safe bowl for 25 to 30 seconds; stir. Drizzle raspberry jam evenly over mixture.
5) Bake for 25 to 30 minutes or until light golden brown. Cool completely in pan on wire rack. Cut into bars. Enjoy.
