Homemade Fish Bites
I find it challenging to get my kids to eat any kind of fish…okay even the hubby! I want the kids to have a well rounded diet and eat seafood. I try to incorporate seafood into things they already like for example tacos or nuggets. One of my favorite ways to get the kids to eat more seafood is with Homemade Fish Bites! I made these fish bites and all kids loved them big and small!
Once you make these quick and simple fish bites you will never buy the frozen mystery type or go through a drive thru for your fish bite craving again. Check out the ingredients in the new McDonalds fish bites. Yeah, doesn’t sound too appetizing to me!
The recipe that I make has 5 ingredients and you can pronounce them all and buy them in your local supermarket.
You should make a batch of them at first and freeze them for later meals. I would cook them completely then just warm them in the oven.
You can serve them by themselves or put them in a taco shell with lettuce and tomatoes and a squeeze of lemon for a taco meal. Hope your family enjoys these fresh homemade fish bites as much as we do!
Ingredients:
1 tilapia filet cut into bite size pieces
1 lemon
1/2 cup of panko and 1/2 cup of breadcrumbs
1 teaspoon of basil
Salt and pepper
Method:
1. Squeeze fresh lemon juice and zest of fish.
2. Dip fish in beaten egg.
3. Combine breadcrumb mixture, basil and salt and pepper.
4. Toss fish into breadcrumb mixture.
5. Bake in 400 degree oven for 10-12 minutes or brown in 2 tablespoons of oil until cooked completely.
* Makes approximately 10 fish bites.
