Holiday Chex Mix – Gluten Free Snack

I just love all the holiday baking right now. Seriously, I could bake yummy treats all day long if I had the time and had more people to gobble them all up.

While I’ve been making some sinfully delicious treats lately, I know many households have one or more gluten-free member. Many times gluten-free means that person can’t whip up many of the treats I share.

Today, I wanted to share one of our favorite holiday snacks that just happens to be gluten-free. See, we do listen to our Baby Gizmo readers! 🙂

This is an oldie but a goodie recipe and the great thing is that you can modify it to meet your specific likes and dislikes. Plus, it’s super easy to make, you don’t need the oven and stores beautifully in the freezer for when a last minute snack is needed.

Holiday Chex Mix

Ingredients:

9 cups Rice Chex cereal (gluten free)

3/4 cup white chocolate chips

1/2 cup peanut butter

1/4 cup butter or margarine

3/4 cup powdered sugar

3/4 cup holiday M&Ms

1/4 cup red and green holiday sprinkles

Preparation:

1.  Put all 9 cups of the cereal in a large bowl. In small microwavable bowl, melt chocolate chips, peanut butter and butter for 1 minute to 1 minute 30 seconds in the microwave until creamy and smooth. Pour peanut butter mixture over cereal, stirring until evenly coated.

2.  Place 1/2 of the cereal mixture in 1-gallon food-storage plastic bag. Add powdered sugar. Seal bag; shake until well coated. Spread onto half of a waxed paper covered tray.

3.  Stir M&Ms and sprinkles into remaining cereal mixture. Spread on the other half of the pan and put in the freezer for about 10 minutes.

4. Remove from freezer and mix both cereal mixtures into a serving bowl. Store in airtight container.

*The mixture doesn’t have to be refrigerated but it keeps longer if you keep it in the freezer.
