DIY Fruit Roll Ups – Fruit Leather
Ingredients:
3 cups of frozen or fresh fruit
½ cup water
1-2 Tbsp sugar (optional)
Directions:
*I used frozen fruit to make my fruit leather but you can use fresh as well.
1. Preheat your oven to 170 – 200 degrees. Basically the lowest temperature your oven will go. Line a baking sheet (or jelly roll pan – it has to have sides) with parchment paper.
2. Place 3 cups of mixed berry fruit (strawberries, blackberries, blueberries and raspberries) in a medium pot. Add ½ cup of water. On medium, heat the fruit for 5-7 minutes until it is soft and mushy. Remove from heat.
3. With an immersion blender, food processor or blender (I used the Vitamix), pulse the fruit mixture until blended into a liquid.
4. Pour the fruit liquid into your prepared baking pan. Spread to all the sides.
5. Cook the fruit in the oven for 6-8 hours. You will know it is done when the center is dried out. If the center is still wet, keep it in the oven.
6. Once the fruit is completely dry, remove from oven and let cool completely. Tear or cut strips or shapes out of the leather. Enjoy.

Can you use other friuts like apples or watermelon? My daughter has “issues” with the seeds (but loves strawberries) and I have to figure out healthier versions of her fav store bought goodies because of her thyroid issues. Guess I can try mixing the watermelon with another fruit and see what happens.
