Chicken Salad Ranch Roll Ups
I love recipes where I can sneak in healthy stuff that my kids would otherwise never eat. I add kale to a variety of meals such as sandwiches, soups and salads. Since kale is high in vitamins, calcium and iron – it’s the perfect vegetable. You can sauté kale with olive oil and garlic and serve it as a side to any meal. Mix it in with salad greens and you kick up the nutrients content in your salad. Kale has many culinary options.
I make these roll ups all the time for the kids. No one in the house likes mayo including myself so I toss the chicken with a little ranch dressing. Chicken Salad Roll Ups make a quick, healthy meal in no time. I cut them into small pieces so they can eat them easily and it makes them more fun and inviting.
You can change the protein and add tuna fish or use a low-fat mayo based dressing if you don’t like ranch. If your little ones aren’t allergic to nuts you can add nuts for extra protein and a little crunch (We have a nut free house as both little ones are allergic). Ingredients:
1 cup of diced cooked chicken
1 whole wheat flour tortilla
3 tablespoons of ranch dressing
1/4 cup of chopped kale or baby spinach
Method:
1. In a bowl combine chicken, kale and ranch dressing.
2. Add 1/4 cup of chicken salad to one end of the tortilla roll.
3. Roll tortilla up cut into equal pieces.
* Recipe makes 4 rolls ups or two larger ones.
