Strawberry Spinach Salad

Okay, I’m feeling really bad about throwing all those delicious desserts at you lately. Some of you are starting to think I must feed my kids cupcakes, cookies and cakes 3 meals a day. I assure you this is not true. 🙂 We do enjoy a tasty dessert from time to time but we don’t have ice cream IVs hooked up to the kids or anything like that. In fact, I really do make them delicious healthy meals and snacks all the time. Salads just aren’t usually as fun to brag about like Peanut Butter Cup Brownies are. Plus, like I’ve told you, I’m a baker at heart.

To prove to you all that I do know more than just sugar, I am sharing a fabulous Strawberry Spinach Salad recipe with you today. The best things about this salad are:

1) It’s easy to make. You can literally throw it together in just a few minutes.

2) Great for the upcoming strawberry season.

3) It actually gets my kids to eat spinach. Seriously. They eat this spinach. Shocking, right?!?

4) It’s totally healthy!

This Strawberry Spinach Salad is loaded with fresh fruit, fresh spinach and yummy macadamia nuts. (You can always leave out the nuts if you have a nut allergy in the house!) Also, you can make the dressing from scratch with three easy ingredients or you can cheat like I do sometimes and just buy the Kraft Light Raspberry Vinaigrette salad dressing.

Ingredients:

1 Bag Dole Baby Spinach

3 Kiwi – peeled & sliced

1 pint Strawberries, sliced

1 handful chopped macadamia nuts (depending on how many nuts you like!)

1/2 cup +/- Kraft Light Raspberry Vinaigrette Dressing (or make your own with the ingredients below.)

Make Your Own Dressing Ingredients:

1/4 cup vegetable oil

2 Tbsp Raspberry vinegar

2 Tbsp Raspberry Preserved

Preparation: 

1) Slice your strawberries and kiwis (I then quarter the kiwi slices into bite-size pieces!).

2) Mix together the fruit, nuts and baby spinach leaves. Add as little or much dressing as you like. That’s it. You have a salad everyone will love and you just might get the kids to actually eat spinach without too much of a fight. (At the bare minimum, they will pick out all the healthy fruit and eat that!) 🙂

Ingredients
  

  • 1 Bag Dole Baby Spinach

  • 1 pint Strawberries sliced
