Crunchy Romaine Strawberry Walnut Salad

After a long run of mouth-watering desserts featured here lately, I thought it was time to bring it down a notch and talk about something a bit more healthy. We are getting ready for the kids to head back to school and our nights are filling up with sports and other activities. That means there is less time to make dinner. Last night was one of those nights but instead of resorting to pizza or something quick and unhealthy, I declared it a “Salad Night”! That’s right, I whipped up the fabulous Crunchy Romaine Strawberry Walnut Salad that I served as an entrée to the whole family.

This delicious salad isn’t as healthy as other salads may be because it does include butter and Ramen noodles, but I can (almost!) promise you that it is healthier than the fully loaded pizza my husband was looking for.

Even though he wanted pizza – in the end my husband and kids were super happy with this salad. Yes, my kids eat salad. Sometimes. When I don’t offer them anything else. 🙂

My husband even commented that this was one of the best salads he has had in a really long time. Yep, it’s that good! It is just an amazing combination of crunchy, sweet, nutty and overall deliciousness! While I served it as an entrée, this salad makes a great side salad to any dinner!

Ingredients:

1 package ramen noodles (any flavor because you aren’t using the flavor packet anyway!)

1 cup chopped walnuts

1/4 cup butter

1/4 cup sugar

1/4 cup canola oil

2 Tablespoons red wine vinegar

1/2 teaspoon soy sauce

8 cups torn romaine lettuce

1/2 cup chopped green onions

2 cups fresh strawberries, sliced

Preparation:

1. Break the Ramen noodles into small pieces. (Just throw away the seasoning packet because we don’t need it!)

2.  In a large skillet, cook noodles and walnuts in melted butter over medium heat for 6 minutes or until golden brown. Make sure you stir frequently so they don’t burn! Remove from the heat and cool. (This is what I call the “Magic Crunch” because it MAKES the salad!)

3.  While the walnut mixture is cooling, make the dressing. In a small bowl whisk together the sugar, oil, vinegar, and soy sauce until well combined. Combine the romaine, green onions, strawberries, and noodle mixture in a large bowl. Drizzle with dressing and toss gently. Serve immediately.

4. Yep, that easy!
